Low-Carb Bread for the Bread Machine

¾ cup (180g) water, cold

4 large eggs (227g)

¼ cup (55g) olive oil

1 Tbsp. (4g) Sugar substitute (erythritol or stevia)

2 tsp. (8g) baking powder

1 tsp.  (6g) salt

2 ¼ tsp. (7g) OR 1 packet of Active Dry yeast

1 ½ cup (172g) Panhandle Milling Vital Wheat Gluten Powder

2 cups (172g) Specialty Grains golden flax seed meal (use brown flax for darker colored loaves)

¼ cup (28g) sunflower seeds

Directions:

  • Put the water, eggs, oil, and sugar substitute in a bread machine pan.
  • In a separate bowl, mix all the dry ingredients. Mix well.
  • Add to the bread machine (on top of the liquid) and set to 3-hour whole wheat bread (1000g). Let the bread machine do the work.
  • Allow to cool in the bread machine pan for 10 minutes before removing.

Yield: about 16 slices. Each slice is roughly 5 net carbs.
