Simple Homemade Gingerbread Plum Cobbler

Visions of Sugarplums will dance in your head once you try this variation on a cobbler.

 Made by slicing plums in half and placing them in a pan, this cobbler is perfect for serving individual portion-sized servings at a buffet or dinner party. The plums are adorned with fresh lemon, orange, and ginger before being topped with a fluffy, spiced gingerbread rich with tangy yogurt in the batter. Served warm, it is an intoxicating wintry fairyland dream come true.

Gingerbread Sugar-Plum Cobbler

6 ripe plums, seeded, cut in half

1 Tbsp. fresh lemon zest

1 Tbsp. fresh orange zest

2 Tbsp. freshly grated ginger

1 cup Panhandle Milling All Purpose Flour

1 tsp. Baking Powder

1/4 tsp. Salt

½ cup packed brown sugar

1 egg

¾ cup vanilla yogurt

2 Tbsp. Molasses

1 ½ tsp. cinnamon

½ tsp. pumpkin pie spice

2 Tbsp. sugar in the raw

½ cup caramel sauce

Directions:

  • Wash and sanitize hands, tools, and work surfaces. Preheat oven to 400°F. Lightly grease a 10-inch pie pan and place plums, cut side up in the pan. Sprinkle with the zest and ginger.
  • In a medium bowl, combine the pancake mix, brown sugar, egg, yogurt, molasses, cinnamon, and spice until combined.
  • Scoop a rounded tablespoon of batter onto each of the plum halves. Sprinkle with raw sugar. Bake 35-40 minutes until golden brown.
  • Drizzle with caramel sauce. Serve warm. Yield 12 single servings.
