Kamut® is the registered trademark name for a unique ancient form of wheat often described as a high-protein cousin of modern Durham. This variety is raised to never cross pollinate with modern wheat. Traditionally the whole grain flour is ideal for bread and pasta. However, ours is a rare, specialty, white all-purpose version of this flour that is free from the bran and slightly lower in protein than bread flour. This makes it suitable for general baking and ideal for specialty cakes, cookies, quick breads, and muffins.
