Healthy and Easy Low-Carb 30-Second Microwave Chia Crepes

Crepes are sometimes considered difficult to make, but there's an easy way. It is almost too easy. Our chef's method takes just 30 seconds per crepe in the microwave, and the results are fantastic and impressive!

They’re four ingredients to make, healthy and fast! But before we get into the simple basics of chia crepes, let’s talk nutrition.

30-Second Microwave Chia Crepes 

Crepes
3 Eggs
1/8 tsp. Salt
2 Tbs. Specialty Grains White Chia Seed
½ tsp almond extract
Cheese Filling
1 cup Low-fat cottage cheese or Ricotta
10-15 drops Liquid Stevia
1 tsp. Vanilla
Honey-Balsamic Glazed Spiced Oranges and Berries
½ cup fresh sliced Strawberries
1 cup Orange Supreme (slices without membrane)
2 Tbsp. Raw Honey
¼ tsp allspice
Dash of ground cardamom, ground

Directions:

Crepes

  • Crack three eggs into a small food processor or blender.
  • Add the salt, chia seeds, and almond extract. Puree until smooth (this should take 30 seconds or less).
  • Place a small 6-inch, square piece of parchment paper on the glass microwave disk or a flat, microwave-safe plate. Pour 2 heaping tablespoons of the crepe batter directly on the parchment paper and gently but quickly spread the mixture evenly to form a small, thin circle about 4 inches in diameter using the bottom of a spoon.
  • Microwave for 25-30 seconds until the center of the crepe is fully cooked. Allow cooling on the parchment paper before trying to remove the crepe. This recipe will yield about 6 crepes.

Cheese Filling

  • In a separate bowl, combine the cottage cheese filling ingredients.
  • Spoon 1-2 tablespoons of the filling in the middle of the crepe and fold in each.

Spiced Oranges and Berries

  • Combine the berries, honey, oranges, and spice in a small bowl. Top the finished filled crepes with berry mixture. Drizzle with high-quality balsamic vinegar to taste.
