This whole grain butternut squash stew is loaded with comforting flavors like a chili, but with more vegetables. The chunks of squash become tender and smooth, giving it a buttery texture with a complex taste. It’s an amazingly gourmet twist on a rather simple one-pot slow cooker dish. Using the whole grains of wheat, Kamut® or rye help keep you full for hours.

Easy Slow Cooker Southwest Whole Grain Butternut Stew

2 lbs. Lean Turkey sausage, cooked and crumbled
1 cup Whole Organic Specialty Grains* Red Wheat, Kamut® or Rye
3 cups Chicken Stock or Vegetable Stock
1 lb. Diced Butternut Squash, diced
1 15 oz. Can Fire Roasted Organic tomato dices
1 15 oz. Can Organic Black beans, cooked
½ cup Green chiles, diced
1 Tbsp. Fajita seasoning
2 Tbsp. Garlic, minced
1 tsp. Cumin seed
Directions: In a slow cooker, combine all ingredients. Cook on low 6-8 hours or High 3-4 hours until the grain is tender. Serve hot. Yield 16 1 cup servings.
