Easy Gluten-free Homemade Amaranth & Almond Flour Crackers

Amaranth is a delicious super-grain with an earthy, fresh, and complex flavor. Using this specialty flour in gluten-free crackers gives the crackers a divine flavor with a crisp crunch.

In this recipe, amaranth is coupled with almond flour for exceptional nutrition. With protein, fiber, and fantastic flavor, these crackers are an excellent addition to any snack. Enjoy them with a meal or as an alternative to traditional crackers on a charcuterie board. We added garlic and Italian seasoning, which can also be seasoned to fit any flavor. Try using Fajita seasoning or Dill instead of Italian seasoning for unique twists. For best results, keep the baked crackers in an airtight container.

Savory Amaranth & Almond flour crackers

1 cup Specialty Grains amaranth flour

1 cup Panhandle Milling almond flour

1/3 cup olive oil

2 eggs

1 tsp. baking powder

1 Tbsp. Italian seasoning

1 Tbsp. granulated garlic

Directions: 

  • Preheat the oven to 350° F. Combine all ingredients in a food processor and process to combine.
  • Flatten the dough, place another piece of baking paper on top, and roll out the dough using a rolling pin to a thickness of ¼ inch.
  • Use a 2-inch cookie cutter to cut out cracker shapes. Place them on a baking tray lined with baking paper or cut them with a knife.
  • Gently prick all over the crackers with a fork to prevent them from puffing up while baking. Bake for 12 to 15 minutes or until golden around the edges.
  • If not serving immediately, cool them on a cooling rack before putting them in an airtight container.
