Easy, Delicious Gluten-Free Almond Flour Sugar Cookies

These almond flour sugar cookies are a fantastic gluten-free alternative to wheat flour cookies. Almond flour is loaded with protein, fiber, and healthy fat. These cookies have the delicate flavor of almonds, and the coconut oil lends a hint of coconut flavor, giving them a tropical flair. 

Gluten-Free Almond Flour Sugar Cookies

3 cups Panhandle Milling Blanched Almond Flour 

1 cup sugar or Low-carb alternative

½ cup Viobin MCT (or extra virgin coconut oil) 

½ tsp. baking powder 

2 eggs 

¼ tsp. salt 

1 ½ tsp. almond flavor 


  • Preheat oven to 350°F.
  • Combine all ingredients well. 
  • Roll into two dozen 1-inch balls, lightly flatten, and pinch into half-moon shape. Place 1 inch apart on a baking sheet. 
  • Bake for 7-10 minutes until golden brown. Roll in powdered sugar if desired—This recipe yields two dozen cookies.
