Buckwheat is in a group of plants called pseudocereals. These seeds are not in the grass family, such as cereal grains (wheat, rye, oats). Other well-recognized pseudocereals are quinoa and amaranth. Buckwheat may sound similar to wheat, but the way it grows makes it completely gluten-free. Gluten-containing grains are almost always part of the grass family.
Buckwheat is used in buckwheat tea, Kasha groats, flour, and noodles. The groats are mild in flavor and used similarly to rice. Buckwheat groats are the main ingredient in many traditional European and Asian dishes.
